9 month's and counting....

**Side note...i wrote this about a month ago but never posted it....oops...

I cannot believe D is 9 months!! It has gone by way to fast and I pray most days that time would sloooow down. This age is a lot of fun but very exhausting. D is all about moving and pulling up on stuff. He does not like to be confined in his pack-n-play which is so difficult since I need to get things done around the house during the day. So therefore we are in the process of changing a guest room into a playroom. It is carpeted so it will be perfect for D to crawl around in without me worrying about him falling on the hardwoods or near the fireplace.

Here are some 9 month happenings:

~ pulling up on anything and everything
~ starting clapping (about 9 1/2 months)
~ crawling on all fours
~ started eating blueberries, cheerios, shredded cheese, sliced bananas
~ size 3 diapers
~ wearing some 9 month stuff although it's starting to get tight. 12 month clothes are a little big right now but there's nothing in between
~ loves swimming
~ takes 2 naps, one in the morning and one in the afternoon

out of the garden pizza

this is one of our favorite dinners to make. it is super easy and you can make it based on what's fresh in your garden.... or fridge! Our tomatoes aren't quite ready to eat yet but our basil is growing like crazy. We could have made some homemade pesto but Trader Joe's makes it so easy for you!

Ingredients:

~ 1 package of martha white pizza crust (follow directions on the back for cooking time and temperature)
~ 1 tomato, sliced
~ handful of basil leaves, washed and dried
~ fresh mozzarella, sliced about 1/2 inch or less
~ pesto for the sauce
~ little bit of olive oil for the dough

Step-by-Step (NKOTB anyone?!)

~ follow directions on back of package. Basically you mix the package with hot water (1/2 cup I think) then roll into a ball of dough, brush with olive oil and let sit for about 5 minutes.
~ After 5 minutes press dough out onto pizza pan, cookie sheet whatever you use to cook pizza.
~ Prick the dough with a fork all over and place in oven for 5 minutes.
~ take pan out and "dress" your pie!

We used pesto out of a jar for the sauce but you could use whatever you like.
We then layered tomato's, basil and fresh mozzarella on the top.
Cook for about 10 minutes.....

kitchen sink granola

so in cleaning out the kitchen cabinets to make room for D's shelf....yes..he is 9 months old and now has his own shelf, I came across some half filled bags/containers/boxes of dried fruits and nuts. I buy dried fruits to have as a snack and then after a few days of my "eating healthy" kick I forget they are up there. I also had some rolled oats leftover from this recipe. So I googled { i heart google} homemade granola and found my inspiration for my kitchen sink granola. I call it kitchen sink granola b/c well it's basically something you can make from anything under your kitchen sink....ok not literally since most everything under the kitchen sink is some sort of cleaning product but you get the point.

Ingredients for the granola




ingredients:

④ cups rolled oats
② cups sweetened (or unsweetened) shredded coconut
② cups sliced almonds ( all I had was whole almonds so I chopped them a bit) 
¾ cup vegetable oil
½ cup of honey
1½ cup diced dried apricots
① cup dried cherries
① cup dried cranberries
① bag chocolate chips
① cup raisins
① cup sunflower seeds

** recipe I followed called for ① cup dried figs and ① cup roasted, salted cashews but I didn't have any. It also did not call for chocolate but everything is better with chocolate :)

directions:
⑴  preheat the oven to 350 degrees
⑵ toss the oats, coconut, and almonds together in a large bowl


⑶ whisk together the oil and honey in a small bowl
(4) pour the liquids over the oat mixture and stir with a wooden spoon until all the oats and nuts are coated

(5) pour onto a 13 by 18 by 1-inch pan
⑹ bake, stirring occasionally with a spatula until the mixture turns a nice, even, golden brown, about 45 minutes
⑺ remove the granola from the oven and allow to cool, stirring occasionally. Add the remaining ingredietns. store the cooled granola in an airtight container.

Mango Salsa

Super easy Mango Salsa....
ingredients:

~ 1 mango, peeled, pitted and diced
~ 1/2 medium red onion, finely chopped {tissues needed - i always tear up with onions :)}
~ 1 jalapeno chile, minced {i left out the seeds, but if you like it HOT leave them in}
~ 1 small cucumber, peeled and diced
~ 3 Tbsp fresh cilantro leaves, chopped
~ 3 Tbsp fresh lime juice
~ salt and pepper to taste

Directions:

Throw everything in a bowl and mix!

Davis' Baptism!

Davis was baptized on May 1, 2011 at Peachtree Road United Methodist Church in Atlanta, Ga.
His grandad, (Thomas' dad), Rev. Tommy Martin baptized him. It was such a special day and we were so glad so many of our family and close friends were there. Davis wore a gown that his uncle Matt wore when he was baptized. We had a luncheon after the service to celebrate the big day and Davis slept through most of it! I think he was exhausted from the busy morning :)

6 months!


We can't believe that Davis is already 6 months old! {Actually as I write this he is 7 1/2 months old so shhhh} Time has flown by and all those strangers that told you "they grow up so fast", "next thing you know he will be in college" are actually right. And I find myself saying those same things to pregnant moms who are probably thinking "thanks Debbie Downer". On one hand it is sad to see them grow up but on the other hand it is fun to watch them learn new things and start to do more than poop and sleep.

Above is the face that Davis make 90% of the time. He always looks concerned about something. If Davis could write a bio/resume I think this is what he would have to say:

My name is Williams Davis Martin but you can call me Davis. I weigh almost 18 pounds I have been alive for 223 days or if it's easier for you 7 months and 11 days. I like math. I have counted one tooth but feel others coming in. I usually feel my other teeth coming in late at night and I like to let my mom and dad know they are coming in.

I like to take long walks around the neighborhood or Chastain Park. Other forms of exercise I like are bouncing in my bouncy seat, crawling around the rug in the living room, rolling around in my room and rocking in my chair. I love to read. Some of my favorite books are: Llama Llama Red Pajama, Don't Let the Pigeon Drive the Bus, really anything by Mo Willems because he gets me, Tumble Bumble, and..... the Bible :) I love music and love when my dad plays the guitar and sings to me. My favorite songs/bands are Vampire Weekend (this was the first band I "heard" while in my mom's tummy and they aren't as scary sounding as their name implies), Isty Bitsy Spider, There's a Hold in My Bucket, Baby Monkey and anything by Baby Einstein.

I have two dogs that I love to pet and by pet I mean pull their fur by hand fulls.  Baxter stays away from me most of the time but Georgia loves to lick me. Here is a picture of me and my dogs.

I love to eat! I haven't met a food yet that I didn't like. I know my mom works hard to make my food so I put on a happy face especially when eating peas and carrots.

yellow squash
pineapple
Foods I don't like are:
carrots
eating some papaya




Toys! I love toys. Especially ones that squeak and play music. For Easter I got Sophie the giraffe and love to hear her squeak.



I also like to play with mommy's necklaces. Maybe I'll get her one of these for Mother's Day.

can't wait to eat birthday cake in 4 1/2 months!

Easter lunch leftovers: Recipe #2

So we had a lot of extra food from Easter so here is a leftover recipe for the asparagus and rosemary potatoes.

Asparagus and cheese omelet, turkey bacon and rosemary potatoes..Breakfast for dinner is always good

Ingredients

{1} leftover asparagus
{2}  4 eggs
{3} cheese
{4} bacon or turkey bacon
{5}leftover rosemary potatoes (basically fingerling potatoes roasted in olive oil and fresh rosemary)
{6} fresh fruit

Make an omelet. Stir in the asparagus (step 8 if you are following the steps) and cheese. :)


Heat turkey bacon in the skillet after you make the omelet, heat up the leftover potatoes and cut up some fresh fruit.
